The Spark

It started in Istanbul, watching a master spice trader named Amir distinguish this year's saffron harvest from last year's by touch alone. He knew which farm each batch of cardamom came from, when it was picked, how it was dried.

That intimate connection between source and kitchen is what we've lost. Spices once launched expeditions, built empires, and were literally worth more than gold. Today, 73% of home cooks have expired spices in their kitchens — colorful dust where there should be vibrant, transformative flavors.
